Marry Me Chicken on a bed of green beans for two

Ingredients:

Chicken:

• 2 boneless, skinless chicken breasts (approx. 6-8 oz each)

• 1 tablespoon olive oil

• 1/2 teaspoon garlic powder

• 1/2 teaspoon onion powder

• 1/2 teaspoon paprika

• Salt and pepper to taste

Sauce:

• 2 tablespoons unsalted butter

• 2 cloves garlic, minced

• 1/2 cup heavy cream

• 1/3 cup chicken broth

• 1/4 cup grated Parmesan cheese

• 1/4 teaspoon crushed red pepper flakes (optional, for a slight kick)

• 1/4 teaspoon Italian seasoning

• 1/4 cup sun-dried tomatoes (not packed in oil), julienned

• Fresh basil leaves for garnish (optional)

Green Beans:

• 2 cups fresh green beans, trimmed

• 1 tablespoon olive oil

• 1 clove garlic, minced

• Salt and pepper to taste

Instructions:

1. Prepare Chicken:

• Preheat your oven to 375°F (190°C).

• Pat the chicken breasts dry and season both sides with garlic powder, onion powder, paprika, salt, and pepper.

• Heat olive oil in a large oven-safe skillet over medium heat. Sear the chicken breasts for 3-4 minutes per side until golden brown. Remove chicken from the skillet and set aside.

2. Make the Sauce:

• In the same skillet, reduce heat to medium and melt the butter.

• Add minced garlic and sauté for 30 seconds until fragrant.

• Stir in the heavy cream, chicken broth, Parmesan cheese, red pepper flakes, Italian seasoning, and sun-dried tomatoes. Let the sauce simmer for 3-4 minutes, stirring occasionally, until slightly thickened.

3. Combine & Bake:

• Return the chicken breasts to the skillet, spoon some sauce over the chicken, and transfer the skillet to the oven.

• Bake for 15-20 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).

4. Cook Green Beans:

• While the chicken bakes, heat olive oil in a separate pan over medium heat.

• Add the green beans and sauté for 4-5 minutes, stirring occasionally.

• Add minced garlic, salt, and pepper, and cook for another 2-3 minutes until the beans are tender but still crisp.

5. Assemble:

• Divide the sautéed green beans between two plates as the base.

• Place a chicken breast on top of each serving of green beans and spoon the sauce over the chicken.

• Garnish with fresh basil leaves, if desired.
